I work for a company that sells tours and activities (in the tourism industry). They are currently using Dot Net Nuke but they are considering switching over to WordPress. They have a large site with 1000+ pages, so knowing WP is Open Source do you think it is a good idea to switch to WP? The main reason they want to switch to WP is because they think it is more SEO friendly. My main concerns are: WP security, frequency of needed updates, stability of the system, etc.

Well, people generally like wordpress because it is easy to modify (via plugins) has a lot of functionality, is pretty easy for people to write / contribute, has a robust comments system... and is secure because it DOES get frequent updates. Plus there are lots of designers / developers already familiar with it.
It might be more seo friendly than what the company you work for currently has, but you can also make it as un-friendly as you want... meaning that SEO-friendliness is influenced as much by HOW you set up the CMS and structure your categories as by the choice of one particular CMS over another.
I am pretty sure that WP is stable and fast with 1,000+ pages... but maybe someone else knows more about this than I do.

1000 pages is not a large site. Any site can be stable and fast if you're smart about caching. There are a bunch of great WP plugins that help with this.

All CMS are SEO friendly. There's not a lot to it. I always write my own CMS tailored to the project, but if I was to recommend a free CMS it would be Drupal.

I don't say Drupal or other CMS are not good but none is like wordpress. I have all my websites based on wordpress and in terms of resources (free or paid) you can not compare it with any other CMS. I recommend it to everybody who want to have a easy to manage website. With a clean template and a few good plugins for seo, the search engines will love it.

Forgot to ask...
Is this going to be an ecommerce site? You said that the company "sells tours and activities (in the tourism industry)."
I am not familiar enough with the ecommerce functions available wordpress to recommend either for or against them (the only one I really know of is woo commerce, but I am sure there are others out there).
Would you be able to split the site into two different sections (i.e., a content management system and a separate ecommerce platform?)
I haven't used joomla, but it seems to have a good reputation for building ecommerce sites, so that is something to think about.
Drupal is over my head and I could provide no useful feedback for it, either pro or con.

There are a bunch of great WP plugins that help with this.
That's where you need to be careful. Most of the WordPress sites I've seen are laden with plugins and it degrades the user experience. Try not to get carried away with too many bells and whistles, the overhead is quite large. I've seen WordPress sites easily weigh in at 3MB minimum per page. To me, that's not a friendly page especially when much of that is loading behind the scenes and will prevent certain actions from being performed until everything is loaded. On a mobile device, this can be frustrating! You're tapping and nothing is happening. That's because there are 100+ HTTP requests executing - and STILL executing, argh! Processing...
