The contact form of one of my domains is filled again and again with garbage

Looks like this

[ credit_sum ]=[ CrDFIVeDRUY ]
[ credit_use ]=[ vnTdmcsHdGKenFcrM ]
[ realname ]=[ Ramsey ]
[ street ]=[ WtlFDCYTxuGR ]
[ postcode ]=[ MDsAOQoLI ]
[ city ]=[ wbrZdFQn ]
[ borny ]=[ IWeXmKPQHJLYmylZU ]
[ bornm ]=[ ZamlxmQLTBMhTlHwpCz ]
[ bornd ]=[ jTFOaxJAvO#*$!Wyljk ]
[ tel ]=[ YVjAMGXktjkYNcUe ]
[ telm ]=[ dibGRwSaESAGmn

Any idea what sense?

They use unique character strings. If they then find those character strings in a google search they know that the form data gets output to a page on your site and will then hammer you with SPAM.

That's quite clever. I always thought it was just random and they were trying some sort of XSS.
