Text encoding - how important is it?

Hi,

Bit of a rhetorical question this, but I'm just wondering how much it should affect the way I work as a web designer? Currently, all my sites are in English or Spanish and my code editor (Coda) automatically selects the text encoding for me. But should I be paying more attention to this and setting it manually?

Not 100% I understand what it's all about either... and sadly, that's after having googled it several times!

Anyone care to enlighten me on this general area and whether it's important to me as a web designer?

a couple of things such as the comment referring to IE5 may not be relevant but it's mostly the same issues as when originally posted.
