How much time does it take until I start to see statistics in Analytics?

It depends on the analytics program you are using, and what site it's recording.
Your server stats are immediate, if you can get those, otherwise, most analytics programs record immediately, and you should be able to see live stats, and at worst, if it's on someone else's server, they are usually updated no longer than a few hours.
If you're not seeing anything then something is misconfigured, or you have zero traffic.
