What is considered duplicate content?

Ive tried to be very careful optimizing my forum with original content and not duplicate.

However, What about having the sitemap on every page along with the words " website Copyright © 2007"?

What about user names who post frequently?

For example: If one of my users name was *bugger* and he had 100 posts then the word *bugger* would be on my site 100 times. Should I try and prevent this? If so how?

What if his name was mactrucker but my site was about dinning out?

What about the word "topic" which showes up all the time and the dates?

Should I prevent these things from getting spidered?

I really wouldn't worry about single words in the way you describe.

Much more dangerous are blocksof text; paragraphs or more, and great long lists of internal navigation and site promotional stuff.

A lot of duplication comes from use of templates, where every page is substantially the same, bar a couple of paras of 'unique' info - which is often the same product info as seen on 17,294 other sites!
