Check your site with javascript disabled, if the links are all visible then the spider should see them. CSS menus are probably the best way to build a DHTML-type menu that is Search Engine friendly.

Avoid javascript for navigation, as spiders won't crawl it.

But I try to discourage clients with large sites from using drop downs of any kind. I feel that they present too many choices, both to the user and to the spiders. They can turn every page into a global site map and make controlling PR distribution impossible.
