Can anyone tell me with the basic steps and software I should use to migrate my Outlook data from a PC the Mac and iPad - thanks.

I'm not certain there is an easy way to move EVERYTHING, including all of the emails.
To move the addresses, it's still a PIA. Don't think of exporting, but think of importing to whatever email system you are using.
You might consider gmail instead.

Sorry I mean just the emails, using Windows on Mac via Boot Camp and Outlook for Mac

I don't use Outlook on my Mac, but Apple Mail can import data from Entourage, Mozilla, Thunderbird, Eudora and files in mbox format.
I'm not sure how you can export the data from Outlook, but if you can export in to any of the above formats, you should be able to migrate everything in to Apple Mail.

I did a Bing search on "outlook export formats" and came up with several (near a dozen) tech pages with instructions. Even exporting to mbox format. I don't use Mac for email, so can't help in that regard (still a PC guy in that regard... mac is only for testing purposes...)
