Which version would you use in the title tag (or do you try and get all of them in there somehow)? Which version do most visitors search for?

I believe the "Vs" since its more popular than the "V" and there is no need to put all the sentence smaller the better. :)

In looking it up in the dicionary, the proper term for versus is vs. Going with a standardized dictionary abbreviation should work in any SE as they surely have data that says verus=vs.=Vs.=etc.
So, IMHO either Vs. or vs. would work. Most commonly found is vs. though. :)
