Are clicks on Adsense ads included when calculating a webpage's bounce rate in Google Analytics?

That's an interesting question - my guess would be no - which is why having the ads open in a new window would be nice.

The answer is yes. The moment we have a click our visitors are taken to a page outside.. So it does count..
