Should I create new Adunit for different Website

This is kind of a noob question :) But do I need to/should I create a new Adunit for each website, even with the same dimmensions, colors, etc. or should I just use the same one across multiple sites. Does it matter?

The degree to which it matters depends on the degree to which you want to track performance. I don't only track via url, I also track colors & sizes & pages, so I have channels for these things.

It's up to you. Personally I use one channel per ad unit, and I have a few URL channels as well.

But Google won't mind this? I think I will make some new ads just so I can have different channels, but in the past I've always just put one up if it's the same.

Knowledge is power. The more ways you can identify your ads and quantify their individual performance the greater your ability to optimize your site.

Adsense wouldn't offer the ability to track if they didn't realize it was in their best interest. Have at it.
